During the masterclass, we will explore its characteristics, the differences with Neapolitan pizza, and how to enhance the baking of the dough-biga to achieve a light, melt-in-your-mouth pizza with an exaggerated crust!
And what’s a game without a final test? Hands in the dough and ready to adjust professional ovens to bake the perfect “canotto” pizza – even at home!
