We will explore how different accompaniment sauces enhance dishes and analyze the most effective food pairings, combining practice and theory to understand how to fully highlight each ingredient.

Luca Bini will prepare for us:

Crispy Salmon Fillet with Apple Sauce: A fillet, half-seared and half-cooked with a crispy skin, accompanied by an apple sauce flavored with nutmeg and garnished with radish sprouts.

Cold-Smoked Eel on Brioche Bread: Eel cooked on a plancha, served on a slice of brioche with broad beans in two textures, scented with lemon essential oils, and enriched with edible flowers and sorrel.
